Abstract
The survey was carried out to determine the level of histamine in fishes and fish products in Vietnam. The fishes that were analyzed are anchovy (Encrasicholina heteroloba), skipjack tuna (Sarda orientalis), bigeye tuna (Thunnus albacares), and sardine (Sardinella gibbosa).
